Catherine is 19 years old and a freshman at Tufts University, majoring in Interdisciplinary Studies with a focus in Nutrition Science and Business Innovation and a minor in Engineering Management. She plans to pursue a MS in Nutrition after college. Catherine has severe food allergies to dairy, eggs, peanuts, and tree nuts.
In 2018, Catherine published her own allergy friendly cookbook titled: Cook It Up: Delicious Recipes for Healthy Cooking. Since then, Catherine has been motivated to share allergy friendly recipes and advice on social media and through a personal blog, in order to promote awareness and provide a reliable resource for the food allergy community. Along with that, she has been involved in promoting food allergy awareness alongside FARE, the National Food Allergy Research and Education Organization, through participating and leading their initiatives, working with their Teen Advisory Group, lobbying food allergy acts, and speaking at the FARE Summit in 2018 and 2022.
Catherine is focused on the benefits of incorporating cooking with whole-foods and home cooking to the food allergy lifestyle. Her goal is to use her own experiences to teach others about managing with food allergies and how to utilize healthy cooking to gain a new perspective on the allergy lifestyle.
PURE Allergy Life is the resource she has always searched for during her food allergy journey. Catherine is so excited to share PURE's resources, advice, and insight on living the food allergy lifestyle, and looks forward to being a voice for everyone in this community.
