4 small bunches of baby bok choy
1 tsp. extra virgin olive oil
2 tsp grated fresh ginger
¼ cup water
Salt and pepper to taste
・Wash the bok choy and carefully peel off each leaf, chopping off the very end.
・In a large saute pan, add the olive oil over medium heat.
・Add the bok choy and ginger to the pan along with the water.
・Toss the bok choy in the ginger and olive oil.
・Cover and steam for 3-5 minutes, checking to make sure it is not overdone.
・Bok choy should be tender and bright green.
・Add salt and pepper to taste.
Make it a meal serve it with:
・Steamed white rice
