Breakfast Potatoes

Serves 6


6 Russet baking potatoes

1 Vidalia onion

2 tbsp. olive oil

½ tsp. Smoked paprika

2 tbsp. fresh parsley


・Preheat the oven to 425º F.

・Prepare a sheet pan lined with parchment paper.

・Wash, peel, and dice the potatoes into small cubes.

・Wash, peel, and dice the onion into small pieces.

・Arrange the potatoes and onions on a sheet pan and toss with olive oil and paprika.

・Add salt and pepper, if desired.

・Roast in the oven, on the lowest rack, for 30 minutes.

・Flip over and cook for another 10 minutes, or until crispy.

・Remove from the oven and plate.

・Sprinkle with finely chopped parsley.

・Serve hot.
