3 sweet potatoes
1 tbsp. olive oil
1 tsp. cumin
¼ tsp. chili powder
Cilantro for garnish
・Preheat the oven to 400º F.
・Prepare a sheet pan lined with parchment paper.
・Peel and chop the sweet potatoes into small cubes.
・Arrange on a sheet pan and toss with olive oil, cumin, and chili powder until well coated.
・Add salt and pepper, if desired.
・Roast in the oven, on the lowest rack, for 25 minutes.
・Toss and cook for 5-10 more minutes, or until lightly charred.
・Remove from the oven and plate.
・Sprinkle with finely chopped parsley.
・Serve hot with cilantro lime aioli.
