1/4 small head of green cabbage
1/4 small head of red cabbage
1 cup of dairy free mayo (PURE Pantry Pick: Follow Your Heart Vegenaise)
1 tbsp. fresh lime juice
½ tsp. celery seeds
½ tsp. sugar
½ cup cilantro
Salt and pepper to taste
・Wash and shred the cabbage in a food processor and set aside in a large bowl.
・Peel the carrots and shred in the food processor. Add to the cabbage.
・In a separate bowl, whisk the rest of the ingredients together and add gradually to the cabbage mixture to your desired consistency.
・Toss until well coated.
・Serve cold or at room temperature.
