
“Whole-Wheat Waffles” from The Food Allergy Mama’s Baking Book by Kelly Rudnicki

Makes 8 waffles
Ingredients:
2 tbsp. water
1 ¾ c. rice milk
½ c. canola oil
2 c. all-purpose flour
4 tsp. baking powder
1 tbsp. brown sugar
Prep:
・Combine all the ingredients together in a medium bowl.
・Stir until just combined.
・Grease the inside of a waffle maker with canola oil.
・Preheat an electric waffle maker.
・Pour enough batter to cover the griddle, but do not let the batter get too close
to the edges or it will overflow when cooking.
・Close the waffle maker and cook according to the manufacturer’s directions.
・When the waffle is ready, open up the waffle maker very slowly, and use a
non-metal utensil to remove the waffle.
・Serve with maple syrup, fresh berries, sliced bananas, powdered sugar, or
