2 lbs. red skin potatoes
1 tbsp. olive oil
2 tbsp. fresh parsley
・Preheat the oven to 400º F.
・Prepare a sheet pan lined with parchment paper.
・Wash and cut the potatoes in half.
・Arrange on a sheet pan and toss with olive oil.
・Add salt and pepper, if desired.
・Turn the potatoes skin side facing up.
・Roast in the oven, on the lowest rack, for 25 minutes.
・Flip the potatoes over and cook for another 5 minutes.
・ The potatoes should be browned & crisp.
・Remove from the oven and plate.
・Sprinkle the potatoes with finely chopped parsley.
・Serve hot with a side of Roasted Garlic Aioli.
