1 lb. chicken tenders
1 tsp. smoked paprika
½ tsp. cumin
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. chili powder
・Preheat the oven to 400º F.
・Prepare a sheet pan lined with parchment paper.
・Place the chicken tenders on the sheet pan.
・Mix the spices together in a small bowl.
・Arrange on a sheet pan and toss with olive oil and spices until well coated.
・Add salt and pepper, if desired.
・Roast in the oven, on the lowest rack, for 20-25 minutes
・Flip the chicken and cook for 5 more minutes, or until the chicken is cooked through and lightly browned.
・Remove from the oven and slice into thin pieces and plate.
・Serve hot or at room temperature.
Make it a whole foods Mexican meal and serve it with:
・Chili roasted sweet potatoes with cilantro
・Oven charred fajita peppers and onions
・Cilantro lime aioli
