Summer is here and it’s time for easy, delicious allergy friendly food. We take advantage of fresh seafood every night and prepare it safely at home so it’s stress free and easy!


We love Cod Sandwiches! They are incredible with our very own vegan tartar sauce recipe.

Contains: Wheat and Fish


Serves 4


Ingredients:

1 -1.25 lbs fresh cod cut into 4 sandwich size portions (Select the freshest cod available)

1 cup Panko bread crumbs

1 tbsp. extra virgin olive oil

1 tsp. dried parsley

1 lemon cut into wedges



Prep:


・Preheat the oven to 400 degrees.


・Mix olive oil and Panko together in a small saucepan and cook over low heat until golden brown.


・Add the dried parsley and take off heat. Set aside.


・Arrange the cod filets on a sheet pan lined with foil. Top with the breadcrumbs.


・Bake for 15 minutes or until the fish is white and flaky.


・During the last few minutes, place the sandwich buns open faced on another sheet pan to lightly toasted them.



To Serve:


・Build your cod sandwich with the baked cod, arugula, tartar sauce, and a squeeze of fresh lemon.

Vegan Tartar Sauce


・Serve with PURE Fresh charred asparagus (or any fresh vegetable), roasted potatoes/baked potato, and sweet corn with herbed butter.
